Beluga Caviar

Beluga Caviar are actually roes of an ancient fish which is called the Beluga Sturgeon and it is usually found in the Caspian sea. It could as well be found with other rare types of sturgeons in the Black sea and also some in the Adriatic. The usual caviars are provided by Iran and Russia. The ones provided from Iran are most likely to be the most sought ones because of the fact that they are collected from the southern part of the Caspian sea, which is relatively less polluted.

No question that Beluga caviar is a luxury commodity, as much as sports cars and diamonds. The price of the Beluga caviar might range from $250 per 100 grams to $5000.

We would love to explain why Beluga is that expensive. First, you must know the fish where these roes are provided from.

About the sturgeon

The Sturgeons could be regarded as one of the survivors of the dinosaur era. These submarine creatures have lived for many centuries already, and they have still kept their appearance. The Beluga is the biggest in the breed, and is known to be the only predator. Only about one hundred units can be caught per year because they are extremely rare. Now, due to illegal fishing and trade, plenty of places already prohibited the import of Beluga caviar to save the now endangered species.

This particular sturgeon reaches its maturity in a long time – we could say almost upto twenty years. The eggs of the sturgeon mostly have different colors, from light blue to black. The lighter the eggs the more expensive they are because they come from older fish. The Caviar mostly takes place in the market with no additional ingredients, because it can decrease the value of the roes The word ‘’caviar ‘’ is not originated from Russia, although the roes are considered as a perfect Russian delicacy.

Would you like to know how these roes are prepared ? First of all, the sturgeons are taken out with the help of nets and they are kept alive until they reach the fishery laboratory. They are not processed immediately, instead they are anesthetized. The fish are put in ice to keep them alive and in the same time anesthetized or the fish are whacked below their head for the same purpose. It is essential the eggs be taken out while the fish is still in life, because otherwise, a chemical might be released into the eggs after death, which will for sure cause a bitter taste.
